Give your BBQ a little Caribbean kick

Ingredients
2 scotch bonnet chillies, deseeded
3 sprigs of thyme
4 spring onions roughly chopped
1 small onion roughly chopped
thumb-sized piece of ginger
2 cloves of garlic
Juice of 1 lime
2 tbsp soft dark brown sugar
1 and 1/2 tbsp light soy sauce
2 tbsp ground allspice
1 tsp cinnamon
Freshly ground black pepper
Pinch of sea salt flakes
1 tbsp olive oil
Method
In a food processor, pulse all the ingredients together until blended into a thick paste
Marinate your fish or chicken overnight in the fridge
Light barbecue, open a beer and enjoy!
